Preheat the oven to 180C.
Roll out the pastry and cut it into a square.
Cut this square into 4 equal squares.
Cut the ends off the cheese and slice it.
Place 3 slices on each pastry square and add a teaspoon of honey.
You could also alternate between honey and apple.
Season.
Fold the 4 corners up to the middle, wet them slightly and pinch them together to seal.
Put the squares onto a baking tray and brush with a mixture of egg yolk and water.
Bake for 20 minutes.
Serve warm.
