Amaretti biscuit sandwiches with vanilla ice cream

This is a great dessert served with coffee. Simply follow our vanilla ice cream recipe and wow your guests

INGREDIENTS:

500g pot good-quality vanilla custard
284ml double cream
24 soft amaretti biscuits
Amaretto liqueur (optional)


PREPARATION:
1. Churn in a machine. In a large bowl, mix the vanilla custard and double cream together thoroughly. Next, pour the mixture into the ice-cream maker and churn the mixture until it has a soft, scoopable consistency. Transfer the ice cream to a freezer container and freeze until required.

2. Churn by hand

Mix the vanilla custard and double cream in a bowl and freeze for about 90 minutes, until it starts to set around the edges. Stir well, then repeat the process twice more until the mixture is smooth and frozen. Freeze in a suitable container until required.

3. Sandwich a small scoop of ice cream between two amaretti biscuits. Serve around two sandwiches per person, drizzled with a little Amaretto, if you wish.
