Spicy noodles

This mild curried dish makes enough for one portion, but is easily doubled

INGREDIENTS:

spicy noodles
2 tsp Thai curry paste
3 spring onions, chopped
1 large carrot, grated
1 mugful of vegetable or chicken stock
handful frozen peas
150g straight-to-wok noodles


PREPARATION:
1 FRY THE VEG

Add the curry paste to a pan and fry over a medium heat for 2 minutes. Stir in the spring onions and grated carrot, then cook for 1 minute.

2 ADD THE STOCK

Pour in the stock and frozen peas. Bring to the boil, then simmer for 2 minutes until the carrot is just cooked.

3 COOK THE NOODLES

Stir in the noodles and heat through. Ladle into a mug or a bowl.

SERVE scattered with a few sesame seeds if you like
