Pork and peanut noodles

Ready in just 20 minutes, this quick and easy dish is perfect for busy families

INGREDIENTS:

Pork and noodles300g thin rice noodles
500g pack pork mince
250g pack mange tout, sliced in half
3 tbsp crunchy peanut butter
1 red chilli, deseeded and finely chopped
2 tsp soft light brown sugar
1 tbsp reduced-salt soy sauce
small bunch coriander, chopped


PREPARATION:
Place the noodles in a large bowl and cover with boiling water, leave to soak for 5 minutes, then drain. Heat a wok or a large frying pan, then cook the pork mince over a high heat for 10 minutes, or until the juices have evaporated and the pork is starting to look crisp. Add the mange tout and fry together for 2 minutes.

Meanwhile, whisk together the peanut butter, chilli, brown sugar and soy sauce in a bowl, and stir in 2 tbsp warm water. Add the noodles and peanut sauce to the pan, toss everything well, then fry for 1 minute, stirring until warmed through. Sprinkle over the coriander, and serve in bowls.
