Four-cheese pasta

This quick and easy dish is great for a family meal, but is also perfect for entertaining

INGREDIENTS:

4-cheese pasta400g penne pasta
225g pack chestnut mushrooms
1 tsp olive oil
350g jar 4-cheese sauce
250g bag baby spinach leaves
25g walnut halves
50g blue cheese, crumbled


PREPARATION:
Heat the grill to Medium. Boil the pasta for 10 mins until just cooked, or follow the pack instructions. Meanwhile, fry the mushrooms in the oil for 5 mins until soft and golden.

Tip the cheese sauce and spinach into the mushroom pan and heat through until the spinach wilts. Drain the pasta, stir into the sauce, and season with black pepper. Tip into the large baking dish, sprinkle the walnuts over, then scatter the blue cheese on top. Grill for 8 minutes, until the cheese is bubbling.
