Gammon with leeks

This super-speedy dish can be on the table in just 15 minutes. Easily doubled to serve 4

INGREDIENTS:

Gammon with leekspotato, very thinly sliced
1 leek, trimmed and thinly sliced
300ml chicken stock
1 tsp coriander seeds
2 gammon steaks or slices
1 tsp dijon mustard


PREPARATION:
Put the potato, leek, chicken stock and coriander seeds in a frying pan or wok and season with black pepper. Boil for 6 minutes until the vegetables are just tender. Put the gammon on top of the vegetables and cook for a further 6 minutes.

Heat a grill to High and place the pan under the grill to finish cooking the gammon. Stir the mustard into the sauce, or serve it on the side if you prefer.
