Creamy prawn pasta

Ready in just 15 minutes, this low-fat treat makes a great mid-week dinner. Add a grating of lemon rind to the pasta for a citrus zing

INGREDIENTS:

Creamy prawn pasta400g linguine
200g bag cooked frozen prawns, defrosted
100g bag rocket
3 tbsp creme fraiche
25g parmesan, grated


PREPARATION:
Bring a large pan of water to the boil, then cook the linguine according to the pack instructions. Before draining the pasta, add the prawns to heat them through. Reserve some of the cooking water, then drain.

Return the prawns and pasta to the pan, then tip in the remaining ingredients. Toss everything together, adding a little of the reserved water if the pasta is dry. Serve immediately.
