| Lemon & Herb Crusted Pork Chops | |
| Ingredients: 4 large pork chops, weighing approximately 200g each 75g fresh wholewheat breadcrumbs 1 pack fresh parsley, finely chopped 1 clove garlic, crushed 1 tbsp single cream 1 tbsp plain flour finely grated zest and juice of 2 lemons salt and freshly ground black pepper baked potatoes, vegetables and apple sauce, to serve |

| Directions: 1. Preheat the grill to medium-hot. Snip the fat on the chops with scissors or a knife. 2. Place the chops on the rack in the grill pan and cook for 8 minutes. Meanwhile, prepare the crust: mix the remaining ingredients and season well. 3. Turn the chops and cook for 5 minutes. 4. Pile the crumb topping on to the chops. Cook for 5 minutes under a medium-low heat until the chops are cooked and the topping is set. Serve with a baked potato, vegetables and apple sauce. |
