Rich Ruby Gravy
Ingredients:
50g butter
1 onion, finely chopped
600ml chicken stock
1 glass ruby port
2 tsp mustard powder
1 tsp dried sage
1/2 tsp cayenne pepper






Directions:
1. Melt the butter in a saucepan and cook the onion over medium heat until lightly browned. Stir in the rest of the ingredients and simmer, covered for 10-15 minutes. Add juices (not fat) from the roast if wished.
