| Directions: 1. To make the dressing, place the sunflower oil, garlic, vinegar, chilli, salt, pepper and herbs in a jug and whisk thoroughly. 2. For the lamb, preheat the grill to high. Place the lamb under the grill and cook for 6-8 minutes. Remove from the grill, turn the lamb over and add the peppers to the grill pan. Sprinkle the peppers with some salt, return to the grill and cook for 3 minutes. Remove from the grill, turn the peppers over and cook for a further 3-4 minutes. 3. Arrange the lamb and the peppers on a plate and drizzle with the dressing. Serve with buttered new potatoes. |
