Chilli Sausage and Chick Pea Hot Pot
Ingredients:
450g traditional sausages
2 tbsp vegetable oil
2 small onions, sliced
2 tbsp chilli powder
6 tbsp tomato chutney
2 tbsp tomato purée
1 tbsp Worcestershire sauce
1 tbsp red wine vinegar
1 tsp soft brown sugar
400g canned tomatoes
440g canned chick peas
salt and freshly ground black pepper
mashed potatoes and steamed broccoli, to serve
Directions:
1. Grill the sausages, following the instructions on the pack. When cooked, stand for 10 minutes then slice thickly. Put to one side.
2. Meanwhile, heat the oil over a medium heat in a large saucepan and fry the onion for 3-4 minutes. Stir in the chilli and cook for a further 2 minutes.
3. Add all the sausages and the remaining ingredients. Season to taste. Cover and simmer for 30 minutes. Serve with mashed potato and steamed broccoli.
