| Ingredients: 250g fresh raspberries 1 tbsp icing sugar juice of 1 lemon 4 fresh peaches, peeled and sliced 4 scoops vanilla ice-cream 1 handful hazelnuts or flaked almonds to serve (optional) To remove the skin from a peach, either immerse in boiling water for about 30 seconds or, preferably, peel with a very sharp knife (which preserves the flavour). |

| Directions: 1. Combine the raspberries, sugar and lemon juice in a bowl then force the mixture through a sieve using the back of a spoon or a rubber spatula. 2. Arrange the peaches in serving glasses or bowls. Top with a scoop of ice-cream and pour over the raspberry sauce. Scatter over the hazelnuts or flaked almonds, if desired. |
