| Strawberry and vanilla swirl | |
| Ingredients: Strawberry ice cream 350g strawberries, hulled 85g caster sugar 2 egg yolks 284ml double cream Lemon juice, to taste Vanilla ice cream 250ml milk 250ml double cream 1 vanilla pod 5 large egg yolks 125g caster sugar |

| Directions: 1. For the strawberry flavour, puree the fruit until smooth, then sieve. Whisk the sugar and egg yolks until thick. Bring the cream to the boil, then whisk into the egg yolk. Pour into the pan and cook over a low heat for 4-5 minutes. Strain into a bowl and cool. Add the puree and lemon juice to taste, then chill. 2. For the vanilla flavour, bring the milk, cream and vanilla pod to the boil, then set aside for 15 minutes. Whisk the egg yolks and sugar together in a bowl until thick. Whisk in the milk and cook over a low heat for 4-5 minutes, strain and cool. 3. Pour both mixtures into separate boxes and freeze for four hours, whisking every hour until half frozen. Dollop alternate spoonfuls into a large tub, tap sharply to level, then swirl using a knife. Cover and freeze until solid. |
