Fruit Salad with Yoghurt Dressing

- 125ml low-fat plain yoghurt
- 2 tbsp runny honey
- ½ tsp grated orange rind
- 2 tbsp orange juice
- selection of seasonal fruits (e.g., 1 pineapple, 1 mango or papaya, 2 kiwi fruits, selection of berries)

- Whisk the dressing ingredients together and serve as a side dip with the fresh fruit salad.
- Variations
- Use extra-light cream cheese instead of the yoghurt.
- Use maple syrup instead of the honey.
- Try pineapple juice in place of the orange rind and juice. If using tinned fruit in your salad, you can also mix in some of the juice (try to use fruit in its natural juice instead of syrup, which has added sugar).
- Add a teaspoon of chopped fresh tarragon it has an aniseed flavour and goes well with fruit when used sparingly.
- A bit of freshly grated ginger will give your dressing a new dimension and goes well with tropical fruits.
