This super-speedy dish can be on the table in just 15 minutes. Easily doubled to serve 4
Ingredients
- potato, very thinly sliced
- 1 leek, trimmed and thinly sliced
- 300ml chicken stock
- 1 tsp coriander seeds
- 2 gammon steaks or slices
- 1 tsp dijon mustard

- Put the potato, leek, chicken stock and coriander seeds in a frying pan or wok and season with black pepper. Boil for minutes until the vegetables are just tender. Put the gammon on top of the vegetables and cook for a further minutes.
