Gammon with leeks

This super-speedy dish can be on the table in just 15 minutes. Easily doubled to serve 4
 

Ingredients

  • potato, very thinly sliced
  • 1 leek, trimmed and thinly sliced
  • 300ml chicken stock
  • 1 tsp coriander seeds
  • 2 gammon steaks or slices
  • 1 tsp dijon mustard
Serves: 2       whats this
 

Directions

  1. Put the potato, leek, chicken stock and coriander seeds in a frying pan or wok and season with black pepper. Boil for minutes until the vegetables are just tender. Put the gammon on top of the vegetables and cook for a further minutes.
