- 1/8 tsp Dijon or other French mustard
- 2 tbsp red wine vinegar
- 6 tbsp light oil
- 1 clove garlic, peeled but left whole
- salt and freshly ground black pepper
- pinch of sugar
- 1 tbsp fresh chives, chopped

- Shake together everything but the chives. Just before serving, add the chives and use to dress green leaf salads or warm new potatoes.
