Gazpacho

Ingredients

  • 1kg very ripe tomatoes
  • 1 slice white bread (ideally pan gallego), crusts removed and soaked in 150ml cold water
  • ½ large red pepper, deseeded and chopped
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 tbsp wine vinegar
  • pinch of sugar
  • salt and freshly ground black pepper

Directions

  1. Set a sieve over a small bowl. Quarter the tomatoes, cut away the green core and scoop the seeds into the sieve and reserve.
  2. Place the seeded tomatoes in a food processor or liquidiser. Squeeze the water from the bread and add to the tomatoes with the pepper, garlic, oil and wine vinegar. Whizz until fairly smooth.
  3. Season to taste with a pinch of sugar, salt and pepper. Cover and chill until required.
  4. Squeeze all the juice from the seeds and add to the soup. Adjust seasoning and serve.
