- 1kg very ripe tomatoes
- 1 slice white bread (ideally pan gallego), crusts removed and soaked in 150ml cold water
- ½ large red pepper, deseeded and chopped
- 1 clove garlic
- 1 tbsp olive oil
- 1 tbsp wine vinegar
- pinch of sugar
- salt and freshly ground black pepper

- Set a sieve over a small bowl. Quarter the tomatoes, cut away the green core and scoop the seeds into the sieve and reserve.
- Place the seeded tomatoes in a food processor or liquidiser. Squeeze the water from the bread and add to the tomatoes with the pepper, garlic, oil and wine vinegar. Whizz until fairly smooth.
- Season to taste with a pinch of sugar, salt and pepper. Cover and chill until required.
- Squeeze all the juice from the seeds and add to the soup. Adjust seasoning and serve.
