Gino D'Acampo's Capesante alla Mediterranea con Chorizo

Mediterranean scallops and chorizo
 

Ingredients

  • 15 g chives chopped
  • 100 g chorizo sausages finely diced
  • 15 ml dry sherry
  • 2 cloves garlic, peeled and sliced finely
  • 6 g lemon zest
  • lemon wedges to serve
  • 15 g chopped parsley
  • 250 g Queen scallops small and coral removed

Directions

  1. Place a large frying pan over a medium heat and allow it to get hot. Add the chorizo sausage and fry for 1 minute.
  2. Add garlic and then the scallops to the pan and cook for a further 1-2 minutes.
  3. Increase the heat and add the lemon juice, zest and the sherry. Sprinkle the parsley and chives into the frying pan.
  4. Turn the heat off and serve with lemon wedges.
