Mediterranean scallops and chorizo
Ingredients
- 15 g chives chopped
- 100 g chorizo sausages finely diced
- 15 ml dry sherry
- 2 cloves garlic, peeled and sliced finely
- 6 g lemon zest
- lemon wedges to serve
- 15 g chopped parsley
- 250 g Queen scallops small and coral removed
Directions

- Place a large frying pan over a medium heat and allow it to get hot. Add the chorizo sausage and fry for 1 minute.
- Add garlic and then the scallops to the pan and cook for a further 1-2 minutes.
- Increase the heat and add the lemon juice, zest and the sherry. Sprinkle the parsley and chives into the frying pan.
- Turn the heat off and serve with lemon wedges.
