Goats' Cheese and Roasted Red Pepper Sandwiches

Bottled vegetables (look for ones imported from Italy) make a surprisingly fresh-tasting sandwich, especially with the addition of bright green basil dressing. The goats' cheese contrasts nicely with the sweet peppers.
Ingredients
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 small clove garlic, finely chopped
- 2 tbsp finely chopped basil leaves
- 110g roasted red peppers, coarsely chopped
- 170g fresh goats' cheese
- 4 crusty Italian rolls, such as ciabatta, sliced in half
- salt to taste

- Whisk together the olive oil, vinegar, garlic, basil and salt in a small bowl. Toss the roasted peppers with the dressing to coat.
- Spread some goats' cheese on the bottom half of each roll. Top with the pepper mixture. Finish with the top halves of the rolls.
