Goats' Cheese and Roasted Red Pepper Sandwiches

Bottled vegetables (look for ones imported from Italy) make a surprisingly fresh-tasting sandwich, especially with the addition of bright green basil dressing. The goats' cheese contrasts nicely with the sweet peppers.
 

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 small clove garlic, finely chopped
  • 2 tbsp finely chopped basil leaves
  • 110g roasted red peppers, coarsely chopped
  • 170g fresh goats' cheese
  • 4 crusty Italian rolls, such as ciabatta, sliced in half
  • salt to taste
Serves: 4 Preparation: 10   Total Time: 10min whats this
 

Directions

  1. Whisk together the olive oil, vinegar, garlic, basil and salt in a small bowl. Toss the roasted peppers with the dressing to coat.
  2. Spread some goats' cheese on the bottom half of each roll. Top with the pepper mixture. Finish with the top halves of the rolls.
