- 4 tbsp vegetable oil
- 2 medium onions, chopped
- 2 large carrots, chopped
- 2 large parsnips, chopped
- 4 tbsp paprika
- 2 tsp caraway seeds (optional)
- 4 medium potatoes, chopped
- 2 x 400g cans chopped tomatoes
- 2 vegetable stock cubes dissolved in 1.2 litres boiling water
- soured cream and freshly chopped parsley, to garnish

- Heat the oil in a large saucepan and cook the onions, carrots and parsnips over a medium heat for about minutes until the onions have softened.
- Stir in the paprika and caraway seeds. Stir in the potatoes until evenly coloured with the paprika.
- Add the tomatoes and stock and bring to the boil. Reduce heat, cover and simmer for minutes. Serve in bowls or mugs with a dollop of soured cream and some chopped parsley sprinkled on top.
