Ingredients

  • 4 tbsp vegetable oil
  • 2 medium onions, chopped
  • 2 large carrots, chopped
  • 2 large parsnips, chopped
  • 4 tbsp paprika
  • 2 tsp caraway seeds (optional)
  • 4 medium potatoes, chopped
  • 2 x 400g cans chopped tomatoes
  • 2 vegetable stock cubes dissolved in 1.2 litres boiling water
  • soured cream and freshly chopped parsley, to garnish

Directions

  1. Heat the oil in a large saucepan and cook the onions, carrots and parsnips over a medium heat for about minutes until the onions have softened.
  2. Stir in the paprika and caraway seeds. Stir in the potatoes until evenly coloured with the paprika.
  3. Add the tomatoes and stock and bring to the boil. Reduce heat, cover and simmer for minutes. Serve in bowls or mugs with a dollop of soured cream and some chopped parsley sprinkled on top.
