A great way to use up leftovers from Sunday's roast - and a tasty, no-cook treat
Ingredients
- 1 small baguette, cut lengthways
- sprinkle olive oil and red wine vinegar
- pinch dried oregano
- handful leftover lamb
- few slices red pepper and red or white onion
- shredded lettuce
- 3 tbsp crumbled feta

- Sprinkle the inside of the baguette with a little olive oil, vinegar, oregano and a little seasoning. Layer the lamb, salad veg and feta, then wrap tightly in cling film.
