Greek Spinach and Feta Pie

This spinach pie, called spanakopita, is a delicious classic, good for a snack, take-along work lunch or a meal in itself.

Ingredients

  • 75ml Greek olive oil
  • 1 large diced onion
  • 2 crushed cloves of garlic
  • 400g spinach, washed
  • 25g parsley, chopped
  • 2 eggs, lightly whisked
  • 400g Total Feta Cheese
  • 1/4 tsp nutmeg
  • 8 sheets Filo pastry
  • Salt and pepper
  • Round loose bottom tin, 210mm diameter

Directions

  1. Cook the onion and garlic in a little olive oil until translucent. Add the spinach and parsley and continue cooking until the spinach wilts
  2. Allow to cool a little then place spinach in a tea towel and squeeze out the excess juice. Mix the Total Feta Cheese and the eggs with the spinach. Add the nutmeg and season
  3. To line the tin with the Filo, brush the first sheet with olive oil and place it face down, leaving some over-hanging the tin edge. Turn the baking tin degrees and repeat with another sheet of Filo. Repeat two more times
  4. Fill the tin with the feta and spinach mix, then fold in the over hanging Filo
