Green Bean and Radish Salad with Dill

This is a great side dish for grilled foods, or a refreshing change of taste when served along roasted meat. To reduce fat and calories, use less olive oil or substitute with low-fat salad dressing or yoghurt.
Ingredients
- 700g green beans, cleaned and trimmed
- 170g bag of radishes
- 5 tbsp chopped dill
- 5 tbsp olive oil
- 3 tbsp balsamic vinegar

- In a large saucepan, cover the beans and radishes with water, bring to the boil and cook for minute.
- Pour the beans and radishes into a colander and rinse with cold water.
- In a food processor or by hand, mix the chopped dill with the olive oil and balsamic vinegar and put aside. Place the beans in a large mixing bowl, slice the radishes and add them to the bowl. Toss with dill dressing.
- This dish can be served as it is with beef, chicken or fish or on a bed of sliced tomatoes.
