Celery that has been cooked in tomato is absolutely delicious. In this recipe we've added fine green beans, too, for a contrast of colours and flavours. If you prefer baby sprouts, they will work equally well.
Ingredients
- 150ml chunky passata or 1 x 220g can chunky chopped tomatoes made up to 450ml with water
- 1 vegetable stock cube
- 6 sticks celery, cut into 1cm slices
- 300g fine green beans, trimmed and halved, or 300g baby sprouts
- pinch of freshly ground black pepper

- Place the tomato and water mixture together with the crumbled stock cube in a saucepan and add the slices of celery. Bring to the boil, then reduce the heat, cover and simmer for minutes. Add the fine green beans or baby sprouts and simmer, covered, for a further minutes. Season to taste with freshly ground black pepper.
