Grilled Aubergine Salad

- 3 large aubergines
- 5 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 2 tbsp cider vinegar
- 4 tbsp roughly chopped flat-leaf parsley
- salt and freshly ground black pepper

- Slice the aubergines lengthways into 1cm slices, then place on a tray, lightly sprinkle with salt and leave for 15 minutes. Heat a ridged grill pan on a high heat. Wipe the beads of moisture off the aubergines with kitchen paper and brush one side with a little oil.
- Place a few slices at a time on the grill pan, oiled-side down, and cook until dark ridge marks appear on the underside. Brush with more oil and turn the slices over, they take about 2-3 minutes per side to cook.
- Add the mustard and vinegar to the remaining oil, with 1 tbsp water. Whisk well and pour over the cooked aubergines. Cool, cover and chill in the refrigerator. When ready to serve, grind over some black pepper and scatter with parsley.
