Grilled Marinated Kebab of Lamb

This grilled lamb will make a wonderful addition to your recipe collection. Leftover lamb kebab may also be mixed with rice for lunch the next day.
Ingredients
1 onion, finely chopped
- 1 bunch fresh coriander, minced
- 1 sprig dried thyme, minced
- 4 cloves garlic, minced
- 3 tbsp lime juice
- 3 tbsp lemon juice
- 16 tbsp Worchestershire sauce
- 16 tbsp soy sauce
- 1 large onion, cut into eighths
- 2 green bell peppers, cut into 2cm (1/4in) pieces
- 16 tbsp extra-virgin olive oil, preferably Greek
- 1kg boneless leg of lamb, cut into 2cm (1/4in) cubes

- Combine all the ingredients, except for the lamb, in a bowl and mix well.
- Place the lamb in a non-metallic pan and marinate for at least hours (preferably overnight).
- Thread the meat on to the skewers, alternating meat with green peppers and onion.
- Grill over medium-hot coals, basting with marinade and turning to brown all sides until the meat is cooked medium rare.
