Grilled Marinated Kebab of Lamb

This grilled lamb will make a wonderful addition to your recipe collection. Leftover lamb kebab may also be mixed with rice for lunch the next day.
 

Ingredients

  • 1 onion, finely chopped

  • 1 bunch fresh coriander, minced
  • 1 sprig dried thyme, minced
  • 4 cloves garlic, minced
  • 3 tbsp lime juice
  • 3 tbsp lemon juice
  • 16 tbsp Worchestershire sauce
  • 16 tbsp soy sauce
  • 1 large onion, cut into eighths
  • 2 green bell peppers, cut into 2cm (1/4in) pieces
  • 16 tbsp extra-virgin olive oil, preferably Greek
  • 1kg boneless leg of lamb, cut into 2cm (1/4in) cubes

Directions

  1. Combine all the ingredients, except for the lamb, in a bowl and mix well.
  2. Place the lamb in a non-metallic pan and marinate for at least hours (preferably overnight).
  3. Thread the meat on to the skewers, alternating meat with green peppers and onion.
  4. Grill over medium-hot coals, basting with marinade and turning to brown all sides until the meat is cooked medium rare.
