Grilled whole Barramundi with black olive & basil butter

- (serves 4)
- 4 175-200g Barramundi -cleaned
- 100g Unsalted butter - softened
- 25g Pitted blacked olives - roughly chopped
- 3 Garlic cloves - finely chopped
- 1 tbsp. Lemon juice
- Handful Basil leaves - roughly chopped
- 2 Anchovy fillets in oil - drained
- A little Olive oil

- Put butter, olives, garlic, lemon juice, basil and anchovies into food processor with tsp. salt and blend until olives finely chopped, but not smooth
- Spoon mixture onto sheet of clingfilm and shape into m thick roll. Wrap tightly and place in freezer until firm
- Pre-heat grill on high. Trim down the tails of each fish and brush with olive oil and season with salt and pepper. Grill for minutes each side
