Grilled whole Barramundi with black olive & basil butter

Ingredients

  • (serves 4)
  • 4 175-200g Barramundi -cleaned
  • 100g Unsalted butter - softened
  • 25g Pitted blacked olives - roughly chopped
  • 3 Garlic cloves - finely chopped
  • 1 tbsp. Lemon juice
  • Handful Basil leaves - roughly chopped
  • 2 Anchovy fillets in oil - drained
  • A little Olive oil

Directions

  1. Put butter, olives, garlic, lemon juice, basil and anchovies into food processor with tsp. salt and blend until olives finely chopped, but not smooth
  2. Spoon mixture onto sheet of clingfilm and shape into m thick roll. Wrap tightly and place in freezer until firm
  3. Pre-heat grill on high. Trim down the tails of each fish and brush with olive oil and season with salt and pepper. Grill for minutes each side
