Harissa spiced chickpea & aubergine burgers

These Moroccan spiced chickpea and aubergine burgers and great as an alternative to traditional ones
Ingredients
- 2 x 400g can of chickpeas
- 1 x Small onion
- 2 x Garlic cloves
- 1tbsp x Cumin seeds
- 1tbsp x Al'Fez Harissa Paste
- 1/2 x Pack of fresh, flat-leaf parsley
- 1 x Aubergine
- 100g x Breadcrumbs
- Plain flour
- Salt and freshly ground pepper for seasoning
- Oil for brushing burgers
Directions

- Drain chickpeas, and fry with diced aubergine, onion and garlic in frying pan
- Add to Al'Fez Harissa Paste and all other ingredients (except flour) and put in a food processor - pulse until coarsely chopped
- Season with salt and pepper
- Divide mixture into burgers
- With well-floured hands, shape into burgers
