Tahini paste is made from sesame seeds and is one of the main components of the Middle Eastern dish, houmous
 

Ingredients

  • 400g cooked chicken, shredded
  • 375g cucumber, shredded
  • 4 spring onions finely chopped
  • 4 tsp tahini paste
  • 1 tbsp Blue Dragon White Rice Vinegar
  • 2 tsp English mustard
  • 1 tbsp toasted sesame seeds, to garnish
  • A handful pea shoots, optional
Serves: 4 Preparation: 5   Total Time: 5min whats this
 

Directions

  1. Mix all the ingredients for the dressing in a large bowl - spring onion, tahini paste, Blue Dragon White Rice Vinegar and English mustard. Add the shredded chicken and mix thoroughly.
  2. To serve, put the cucumber slices on a large serving plate and toss with the dressed chicken. Garnish with toasted sesame seeds and pea shoots.
