- 400g cooked chicken, shredded
- 375g cucumber, shredded
- 4 spring onions finely chopped
- 4 tsp tahini paste
- 1 tbsp Blue Dragon White Rice Vinegar
- 2 tsp English mustard
- 1 tbsp toasted sesame seeds, to garnish
- A handful pea shoots, optional

- Mix all the ingredients for the dressing in a large bowl - spring onion, tahini paste, Blue Dragon White Rice Vinegar and English mustard. Add the shredded chicken and mix thoroughly.
- To serve, put the cucumber slices on a large serving plate and toss with the dressed chicken. Garnish with toasted sesame seeds and pea shoots.
