Ingredients

  • Fry Light
  • 6 spring onions, trimmed and finely sliced
  • 2 garlic cloves, peeled and finely chopped
  • 110g/4oz cooked carrots, cut into 1cm/half inch dice
  • 110g/4oz cooked potatoes, cut into 1cm/half inch dice
  • 200g/7oz roasted red pepper, cut into 1cm/half inch dice
  • 110g/4oz feta cheese
  • 4 eggs
  • 6 tbsp finely chopped mixed herbs, such as parsley, dill, tarragon and chives
  • salt and freshly ground black pepper

Directions

  1. Preheat the oven to degrees/Gas Lightly spray a cm/n square ovenproof dish with Fry Light.
  2. Mix together the spring onions, garlic, carrots, potatoes, red pepper, feta cheese and spoon into the prepared dish in an even layer.
  3. Whisk the eggs with the chopped herbs, season well and pour over the vegetable mixture. Place in the oven and bake for - minutes or until golden and just set. Remove from the oven and allow to stand for - minutes before cutting into squares and eating.
