- Fry Light
- 6 spring onions, trimmed and finely sliced
- 2 garlic cloves, peeled and finely chopped
- 110g/4oz cooked carrots, cut into 1cm/half inch dice
- 110g/4oz cooked potatoes, cut into 1cm/half inch dice
- 200g/7oz roasted red pepper, cut into 1cm/half inch dice
- 110g/4oz feta cheese
- 4 eggs
- 6 tbsp finely chopped mixed herbs, such as parsley, dill, tarragon and chives
- salt and freshly ground black pepper

- Preheat the oven to degrees/Gas Lightly spray a cm/n square ovenproof dish with Fry Light.
- Mix together the spring onions, garlic, carrots, potatoes, red pepper, feta cheese and spoon into the prepared dish in an even layer.
- Whisk the eggs with the chopped herbs, season well and pour over the vegetable mixture. Place in the oven and bake for - minutes or until golden and just set. Remove from the oven and allow to stand for - minutes before cutting into squares and eating.
