- 500g Jersey Royal potatoes, rubbed
- 2 tbsp olive oil
- 2 chicken breasts skinned and cut into 2cm (?in) pieces
- 3 tbsp sun-dried tomato flavoured dressing
- 5 spring onions, diagonally sliced
- 1 tbsp each freshly chopped flat-leaf parsley and tarragon
- salt and freshly ground black pepper

- Heat the oil in a large frying pan and fry the chicken for minute.
- Add the potatoes, season with pepper and fry on a medium heat for - minutes until golden and cooked.
