Herby Chicken with Sauteed Potatoes

Ingredients

  • 500g Jersey Royal potatoes, rubbed
  • 2 tbsp olive oil
  • 2 chicken breasts skinned and cut into 2cm (?in) pieces
  • 3 tbsp sun-dried tomato flavoured dressing
  • 5 spring onions, diagonally sliced
  • 1 tbsp each freshly chopped flat-leaf parsley and tarragon
  • salt and freshly ground black pepper
Serves: 4 Preparation: 10 Cook Time: 25 Total Time: 35min whats this
 

Directions

  1. Partly cook the potatoes in boiling, salted water for minutes, then drain well.
  2. Heat the oil in a large frying pan and fry the chicken for minute.
  3. Add the potatoes, season with pepper and fry on a medium heat for - minutes until golden and cooked.
  4. Fold in the dressing, spring onions and herbs.
  5. Wine choice: Lindemans Bin Chardonnay
