Light and delightful, these are perfect with afternoon tea or for a more casual treat, in a packed lunch.
 

Ingredients

  • 120ml / 4 fl oz / 8 tbsp honey
  • 225g / 8 oz plain flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 125g / 4 1/2 oz butter, softened
  • 75g / 2 3/4 oz light brown sugar
  • 1 egg
  • 75ml / 5 tbsp milk

Directions

  1. Preheat the oven to / / gas mark Use paper cases to line a shallow m /inch patty or muffin tin.
  2. Sift together the flour, baking powder and cinnamon. In a separate bowl cream the butter and sugar then whisk in the egg. Slowly whisk in the honey. Fold in the dry ingredients and the milk until just combined.
