- 500g cooked beetroot (not the pickled variety)
- 200g feta cheese
- 250g Greek yoghurt
- 1 packet rocket
- Coriander
- Salt and pepper
- Good quality Greek olive oil

- Dice the beetroot into cm cubes, place in bowl and season
- Chop coriander (as much or as little as you like) and mix with the beetroot
- Mix Total Greek Yoghurt with the beetroot and refrigerate for minutes
