Ingredients

  • 500g cooked beetroot (not the pickled variety)
  • 200g feta cheese
  • 250g Greek yoghurt
  • 1 packet rocket
  • Coriander
  • Salt and pepper
  • Good quality Greek olive oil
Serves: 4 Preparation: 10 Cook Time: 20 Total Time: 30min whats this
 

Directions

  1. Dice the beetroot into cm cubes, place in bowl and season
  2. Chop coriander (as much or as little as you like) and mix with the beetroot
  3. Mix Total Greek Yoghurt with the beetroot and refrigerate for minutes
