This houmous dip is simplicity itself to make. Serve it with warm pitta bread or ciabatta, crudites or barbecued meats and vegetables.

Ingredients
- 400g can chick peas
- 2 cloves of garlic, chopped
- lemon juice
- olive oil and paprika to serve
- salt and freshly ground black pepper

- Drain the liquid from the chick-peas into a small pan and add the garlic. Cook over medium heat for 3-5 minutes, uncovered, until the garlic is softened. Leave to cool then add to the chick-peas and whizz in a food processor until smooth.
- Season to taste with lemon juice, salt and pepper. Serve in a bowl with a little olive oil poured over and sprinkle with paprika.
