Irresistible scones baked golden with Irish Cheddar and filled with Cashel Blue Cheese. Simple to make and a delicious anytime snack.
Ingredients
- 225g/8oz self-raising flour
- pinch of salt
- 50g/2oz butter
- 50g/2oz Irish Cheddar cheese, grated
- pinch of dry mustard powder
- 1 egg, beaten
- approx 150ml/1/4pt milk
- 50g/2oz Cashel Blue cheese

- Sift flour into a bowl with salt. Rub in the butter to breadcrumb stage.
- Add cheese and mustard powder and stir in. Gradually add egg and enough milk to make a soft dough - you may not need all the milk.
- Roll out on a lightly floured worktop to m/n thick. Cut into rounds.
