Italian chicken, smoked bacon and mushroom casserole

We Brits love our bacon and to celebrate Bacon Connoisseurs Week, Loyd Grossman has prepared this tasty recipe
 

Ingredients

  • Olive oil
  • 1/2 Medium Onion, chopped
  • 5 Rashers (approx 100g) chopped smoked bacon
  • 150g Chestnut mushrooms quartered or sliced
  • 500g skinned and boned chicken thighs cut into large chunks
  • 1 x 660g jar Loyd Grossman Tomato and Basil Sauce

Directions

  1. Preheat an oven to .
  2. Heat the oil in a large frying pan. Add the bacon and fry for minutes until cooked. Add the onions and mushrooms and cook for a further minutes. Remove from the heat and transfer the bacon/mushrooms/onion into a large casserole dish using a slotted spoon.
