- 85g plain chocolate
- 3 large eggs
- 2 tbsp milk
- 225g sugar
- 85g plain flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp vanilla extract
- 85g nuts, chopped (optional)

- Grease a x cm/x n deep baking dish.
- Preheat oven to //gas mark
- Melt the chocolate and butter in a bowl over a pan of simmering water.
- Put the eggs and milk in a large mixing bowl and beat lightly.
- Add the sugar and beat a little more.
- Stir in the chocolate and butter mixture.
- Sift the flour, salt and baking powder into the mixture and beat until well blended.
- Stir in the vanilla extract and finally fold in the chopped nuts.
- Pour the mixture into the greased baking dish and bake in the pre-heated oven for - minutes until risen and springy in texture.
- . Turn out on to a cooling rack and, when cold, cut into m/n squares.
