Spicy prawns in a jacket potato
Ingredients
- 2 X 175g baking potatoes
- 200g cooked peeled prawns
- 1/2 small cucumber
- 2 tbsp rice wine vinegar
- 2 tbsp sweet chilli sauce
- 2 spring onions, finely sliced
Directions

- Cook the potatoes in a pre-heated oven at /gas mark for hours or until soft.
- Slice the cucumber in half lengthways and using a small spoon scoop out and discard the seeds. Cut the cucumber into thick slices and place in a bowl with the prawns. Mix the vinegar, chilli sauce and spring onions well. Stir into the prawns.
