Creamy chicken in a tasty jacket
Ingredients
- 2 X 175g baking potatoes
- 200g ready-prepared roast chicken, sliced into bite-sized pieces
- 2 tbsp red pesto
- 4 tbsp low-fat natural bio yoghurt
- 8 cherry tomatoes, sliced in half

- Cook the potatoes in a pre-heated oven at /gas mark for hours or until soft.
- Mix the pesto and yoghurt and stir in the chicken and tomatoes. Slice the potatoes in half, spoon in the chicken mixture and serve.
