Jacket Potatoes with Creamy Chicken Pesto

Creamy chicken in a tasty jacket
 

Ingredients

  • 2 X 175g baking potatoes
  • 200g ready-prepared roast chicken, sliced into bite-sized pieces
  • 2 tbsp red pesto
  • 4 tbsp low-fat natural bio yoghurt
  • 8 cherry tomatoes, sliced in half

Directions

  1. Cook the potatoes in a pre-heated oven at /gas mark for hours or until soft.
  2. Mix the pesto and yoghurt and stir in the chicken and tomatoes. Slice the potatoes in half, spoon in the chicken mixture and serve.
