Jacket Potatoes with Roasted Vegetables and Feta

A delicious and healthy Greek dish
 

Ingredients

  • 2 X 175g baking potatoes
  • 2 courgettes, sliced
  • 1/2 aubergine, sliced into bite-sized pieces
  • 1 small red pepper, sliced into bite-sized pieces
  • 1 small red onion, thinly sliced
  • 1tbsp olive oil
  • 75g cherry tomatoes
  • 40g feta cheese, crumbled
Serves: 2 Preparation: 5 Cook Time: 90 Total Time: 95min whats this
 

Directions

  1. Cook the potatoes in a pre-heated oven at /gas mark for minutes or until soft.
  2. Place the vegetables in a roasting tin, drizzle over the olive oil and cook at /gas mark for minutes. Add the cherry tomatoes and cook for a further minutes.
  3. Slice the potatoes in half and spoon in the vegetables, sprinkle over the feta and serve.
