For a healthy lunch, dinner or barbecue, char-grill salmon or mackerel that has been marinated in oriental ginger, soy sauce and sak?
Ingredients
- 600g salmon fillets or 2 x 155g mackerel fillets and 300g salmon fillets, skin left on and cut into 4
- 6 tsp light soy sauce
- 6 tbsp sake (japanese rice wine)
- 4cm piece fresh root ginger, finely grated
- 2 garlic cloves, crushed
- 1 tsp English mustard
- 2 tbsp toasted sesame seeds
- 2 tbsp light olive oil

- Place the fish in a non-metallic dish. Combine the other ingredients (except the sesame seeds and oil). Pass through a fine sieve over the fish, pressing the ginger juices out.
- After minutes, turn the fish and leave for - minutes. Lift out and pat dry. Heat the oil in a griddle pan and fry the fish or grill on high for minutes per side for mackerel and minutes for salmon. Sprinkle with sesame seeds to serve.
