Salmon Teriyaki Style

Kate’s version of salmon teriyaki is delicious, light and healthy. She suggests that it’s served with a good quality red onion relish, but you can also serve it with some rice if you wish
 

Ingredients

  • For the marinade:
  • 100ml Japanese soy sauce
  • 100ml dry sherry
  • 100ml balsamic vinegar
  • 40g caster sugar
  • pinch of dried crushed red chillies
  • juice of ½ lemon
  • 1 tsp fresh thyme leaves
  • 2 salmon steaks

  • 3–4 tbsp sunflower oil
  • sea salt and freshly ground black pepper
  • red onion relish and lime or lemon wedges to garnish

Serves: 2   Cook Time: 60 Total Time: 60min whats this
 

Directions

  1. Mix all the marinade ingredients together.
  2. Dry the steaks with kitchen paper and place in a bowl with a lid. Pour over the marinade, cover and leave for hour.
  3. Remove the steaks from the marinade, brush with oil, season and barbecue or grill on a medium heat for #minutes on each side. The fish is cooked when the flesh flakes.
  4. Serve with red onion relish and lime or lemon wedges.
