Salmon Teriyaki Style

Kates version of salmon teriyaki is delicious, light and healthy. She suggests that its served with a good quality red onion relish, but you can also serve it with some rice if you wish
Ingredients
- For the marinade:
- 100ml Japanese soy sauce
- 100ml dry sherry
- 100ml balsamic vinegar
- 40g caster sugar
- pinch of dried crushed red chillies
- juice of ½ lemon
- 1 tsp fresh thyme leaves
2 salmon steaks
- 34 tbsp sunflower oil
- sea salt and freshly ground black pepper
red onion relish and lime or lemon wedges to garnish

- Mix all the marinade ingredients together.
- Dry the steaks with kitchen paper and place in a bowl with a lid. Pour over the marinade, cover and leave for hour.
- Remove the steaks from the marinade, brush with oil, season and barbecue or grill on a medium heat for #minutes on each side. The fish is cooked when the flesh flakes.
- Serve with red onion relish and lime or lemon wedges.
