Knickerbocker Glory

This is a decadent, adult version of a childhood favourite. The list of ingredients is meant as a guide only ? the idea is to vary the end result to suit your particular tastes.
 

Ingredients

  • 1 small pot glace cherries
  • 30ml vodka
  • 1 packet fruit jelly
  • fruit selection for fruit salad: e.g. 2 kiwis, 2 pomegranates, 1 mango, 3 nectarines
  • juice of 1 orange
  • 30ml Cointreau or similar
  • 150g raspberries or strawberries, fresh or frozen
  • 60g caster sugar
  • 1 tub good quality ice-cream
  • 1 large pot double cream
  • 1 tbsp Cointreau or other alcohol
  • 100g dark chocolate, chilled
  • 12 small meringues or amaretti biscuits
  • fresh coffee
  • You will also need: a selection of different glasses, teaspoons and cocktail umbrellas.

Directions

  1. At least hours before:
  2. Soak the glace cherries in the vodka.
  3. Make the jelly according to the instructions on the packet.
  4. Cut up the fruit into small pieces and mix together in a bowl, stir in the orange juice and Cointreau and leave in the fridge.
  5. Make a raspberry or strawberry coulis: blend the fruit and sugar in a liquidiser or food processor until smooth, then add l water, bring to the boil in a saucepan, bubble gently for a couple of minutes until glossy, and leave to cool.
  6. Before eating:
  7. Take the ice-cream out of the freezer to soften.
  8. Whisk the double cream until it thickens.
  9. Grate the chocolate on to a chilled plate.
  10. Break up the meringues or biscuits into small pieces.
  11. Make cups of strong, black coffee and pour into a jug.
  12. Put all the ingredients on the table.
  13. To eat:
  14. In a glass, make layers of ice-cream, jelly, fruit salad, and meringue or biscuit. Pour coffee or fruit coulis over the top. Decorate with whipped cream, cherries or grated chocolate.
  15. Variations:
  16. Make a minimalist version in a shot-glass, or go over the top with a tall tumbler, long spoon and cocktail umbrella.
