Lamb Cutlets with Tomato and Ginger

Ingredients

  • 1 tbsp vegetable oil

  • 8 lamb cutlets
  • 25g butter
  • 16 new potatoes, cooked and diced
  • 1 garlic clove, finely chopped
  • 2.5cm piece fresh root ginger, finely chopped
  • 75ml white wine
  • 6 tomatoes, skinned, deseeded and finely chopped
  • 1 tbsp chopped fresh parsley
  • salt and ground black pepper

Directions

  1. Heat the oil in a large frying pan. Cook the cutlets for - minutes until cooked through. Remove and keep warm.
  2. Heat the butter in a frying pan and heat the potatoes for minutes until they are golden.
  3. Add the garlic and ginger to the pan in which the lamb was cooked. Add the wine and reduce by half for about minutes.
  4. Add the tomatoes and cook for a further minutes. Stir in the potatoes and the parsley, and season. Spoon over the cutlets and serve immediately.
