Lamb Cutlets with Tomato and Ginger

1 tbsp vegetable oil
- 8 lamb cutlets
- 25g butter
- 16 new potatoes, cooked and diced
- 1 garlic clove, finely chopped
- 2.5cm piece fresh root ginger, finely chopped
- 75ml white wine
- 6 tomatoes, skinned, deseeded and finely chopped
- 1 tbsp chopped fresh parsley
- salt and ground black pepper

- Heat the oil in a large frying pan. Cook the cutlets for - minutes until cooked through. Remove and keep warm.
- Heat the butter in a frying pan and heat the potatoes for minutes until they are golden.
- Add the garlic and ginger to the pan in which the lamb was cooked. Add the wine and reduce by half for about minutes.
- Add the tomatoes and cook for a further minutes. Stir in the potatoes and the parsley, and season. Spoon over the cutlets and serve immediately.
