Lazy 'not really chicken' and rice

250g (9oz) basmati rice
- 1 chopped onion
- 250g (9oz)sliced button mushrooms
- 6 Quorn fillets
- 900ml (1 1/2 pt) vegetable stock

- Prehat the overn to //Gas mark Meanwhile, spread the basmati rice over the bottom of a greased ovenproof dish, followed by the chopped onion and the the mushrooms. Sit the Quorn fillets on top and then pour over the vegetable stock, mixed with the garlic, thyme, chilli powder and lemon juice.
Season and cook in an oven for about hr or until all the stock has been absorbed and the rice is cooked. Serve with salad leaves.
