Lemon and cumin koftas

These tasty little meatballs are great for entertaining, or you can freeze half the mixture for a future date
 

Ingredients

  • 1kg lean lamb mince
  • grated rind and juice of 2 lemons
  • small bunch of mint, leaves only, roughly chopped (save a little for the salad)
  • 4 tsp ground cumin
  • 1 clove of garlic, crushed
  • 1/2 small red cabbage
  • 1 red onion
  • 1 tsp sugar

Directions

  1. Heat grill to medium. Put the mince in a large bowl and add the lemon rind, half the juice, the mint, cumin, garlic and some seasoning. Use your
  2. hands to mix well, then shape into evenly sized balls, and set aside on a plate. Freeze half
  3. at this stage, if you like.
  4. Grill the koftas on a rack for - minutes, turning once, until browned. Meanwhile, make the salad: shred the cabbage and finely slice the onion, then toss with the remaining lemon juice, sugar, mint and some seasoning.
