Lemon and cumin koftas

These tasty little meatballs are great for entertaining, or you can freeze half the mixture for a future date
Ingredients
- 1kg lean lamb mince
- grated rind and juice of 2 lemons
- small bunch of mint, leaves only, roughly chopped (save a little for the salad)
- 4 tsp ground cumin
- 1 clove of garlic, crushed
- 1/2 small red cabbage
- 1 red onion
- 1 tsp sugar

- Heat grill to medium. Put the mince in a large bowl and add the lemon rind, half the juice, the mint, cumin, garlic and some seasoning. Use your
- hands to mix well, then shape into evenly sized balls, and set aside on a plate. Freeze half
- at this stage, if you like.
- Grill the koftas on a rack for - minutes, turning once, until browned. Meanwhile, make the salad: shred the cabbage and finely slice the onion, then toss with the remaining lemon juice, sugar, mint and some seasoning.
