Lemon & Herb Crusted Pork Chops

Ingredients

  • 4 large pork chops, weighing approximately 200g each
  • 75g fresh wholewheat breadcrumbs
  • 1 pack fresh parsley, finely chopped
  • 1 clove garlic, crushed
  • 1 tbsp single cream
  • 1 tbsp plain flour
  • finely grated zest and juice of 2 lemons
  • salt and freshly ground black pepper
  • baked potatoes, vegetables and apple sauce, to serve

Directions

  1. Preheat the grill to medium-hot. Snip the fat on the chops with scissors or a knife.
  2. Place the chops on the rack in the grill pan and cook for minutes. Meanwhile, prepare the crust: mix the remaining ingredients and season well.
  3. Turn the chops and cook for minutes.
  4. Pile the crumb topping on to the chops. Cook for minutes under a medium-low heat until the chops are cooked and the topping is set. Serve with a baked potato, vegetables and apple sauce.
