Lemon & Herb Crusted Pork Chops

- 4 large pork chops, weighing approximately 200g each
- 75g fresh wholewheat breadcrumbs
- 1 pack fresh parsley, finely chopped
- 1 clove garlic, crushed
- 1 tbsp single cream
- 1 tbsp plain flour
- finely grated zest and juice of 2 lemons
- salt and freshly ground black pepper
- baked potatoes, vegetables and apple sauce, to serve

- Preheat the grill to medium-hot. Snip the fat on the chops with scissors or a knife.
- Place the chops on the rack in the grill pan and cook for minutes. Meanwhile, prepare the crust: mix the remaining ingredients and season well.
- Turn the chops and cook for minutes.
- Pile the crumb topping on to the chops. Cook for minutes under a medium-low heat until the chops are cooked and the topping is set. Serve with a baked potato, vegetables and apple sauce.
