This tasty alternative to traditional minced beef is extremely versatile and can be used in all the same ways, as a topping for jacket potatoes, with mash, pasta or layered in a lasagne. You can add beef or lamb mince for hardened meat-eaters.
 

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 3 sticks celery, finely chopped
  • 125g red lentils
  • 210g can tomatoes
  • 600ml vegetable stock made with a stock cube
  • 1 tbsp soy sauce
  • chopped parsley to garnish, or add a sprinkling of dried mixed herbs when cooking
  • salt and freshly ground black pepper
Serves: 4 Preparation: 10 Cook Time: 25 Total Time: 35min whats this
 

Directions

  1. Heat the oil in a large saucepan and cook the chopped vegetables for about minutes over a medium heat until lightly coloured.
  2. Add the remaining ingredients and bring to a simmer. Cover and cook for about minutes until tender and serve as wished.
