Lesley Waters' chunky chicken wraps

These tasty tortillas really are quick and easy to prepare and a great alternative to sandwiches in a school lunch box. Turkey or ham can be used in place of the chicken
Ingredients
- 4 flour tortillas
- 225g cooked chicken breast cut into strips
- 1 small pot of houmous
- 2 baby gem lettuce leaves washed and dried and roughly chopped
- 1 red pepper, halved seeded and sliced thinly

- Simply spread a layer of houmous over the tortilla wraps.
- Scatter over the chicken strips, gem lettuce and peppers strips
- Tightly roll up the tortillas to form wraps, cut in half and wrap well in cling film. Pack in your lunch box until required
