Low-fat Chicken Kebabs

Satay and kebabs are great as a meal with rice, as a snack or as party munchies. They also allow you to play around with tastes and make great barbecue food.
 

Ingredients

  • 8 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tbsp sugar
  • 6 tbsp chopped coriander
  • 4 tbsp chopped chives
  • 1 tsp finely chopped chilli
  • 500g lean chicken breast, cut into 2.5cm cubes

Directions

  1. Mix together all the marinade ingredients.
  2. Place the chopped chicken in a bowl and cover with the marinade mixture. Cover with plastic wrap and leave to marinate for at least 4 hours in the refrigerator.
  3. Thread the chicken on to skewers and, using any leftover marinade, baste the kebabs with a brush and then grill or barbecue.
  4. Serve with rice or a side salad and low-fat peanut sauce.
